1 vegetable, 3 1/2 lean meat
7 tablespoons liquid egg whites, room temperature
1 tablespoon chopped green onion
1/2 cup chopped red bell peppers
1/2 cup chopped mushrooms
2 tablespoons lite low fat shredded cheese
2 tablespoons nonfat milk
Combine ingredients in a microwave-safe mug coated with non-stick spray.
Microwave on high for 1 minute and give the mixture a stir.
Return to the microwave and cook for 1 to 2 minutes until the eggs are cooked through.
Add a garnish and enjoy.
